Buyer has purchased an item w the wrong address listed. I had already purchased the label before the buyer informed me. I have contacted them and cancelled the order but am unable to cancel the postal label through seller hub as per Ebay help states. Says this label can't be cancelled? Any ideas?

If this was an eBay Simple Delivery label, it will be refunded automatically if not used.
This may take up to 30 days, apparently.

I would suggest that you cancel the order and advise the customer to correct their address and then re-order so that you can send. eBay state somewhere that you must send to the address on the order to obtain full protection.

Did the buyer contact you by any chance to ask you to send the item to a different address? Just double checking, as the address on the label are entered by the buyer at the time of purchase. So, if you are using Simple Delivery, or you just purchased a label through eBay, the address should be correct, and in that case all you need to do is sending the item. If it is delivered to the address entered by the buyer, you will be protected. If the buyer just entered the wrong address, you can ask them to cancel, and then you can just relist and the buyer will have to ensure to enter the right address that time.
If you are using Simple Delivery, you don't need to do anything as the label will be automatically refunded within 30 days, and if you are not using Simple Delivery, you can see how to void labels here.
Now, if you purchased your label on your own and you entered the wrong address, you can probably void that one with the carrier directly and purchase a new one with the correct address.
