I am using Simple Delivery.
I have my account configured so I can set a Working days handling of 3 Days , I get this option when I create a listing - see attached , however it always seems to revert to two days when I sell somthing. Yesterday at 18:15 Sunday 5th October I sold a camera however when I process the sale Monday morning I am told I have to despatch by 7th Oct at 11.59pm BST this is Tuesday - that is only two working days especially when you consider the Sunday is not a working day. This is happening on all my sales.
Any thoughts?

Have you tried Bulk Editing all your listings?
Listings > Edit > Edit All > Dispatch Time sort low to high
Alas you have to edit one by one.
Only mentioning it because I also have 3-day dispatch, but when you list new items eBay automatically loads features like 2-day dispatch or Postage + Collection. If you're going quickly they can be easy to miss.
If you have already tried a Bulk Edit then I would use:
Seller Hub > ? Icon > Report a Technical Problem

When I relist my unsold items I usually use the bulk relist option and check the working days, yesterday about a third of them reverted to two days so I updated them to three one by one in the bulk tool and then relisted them. It is as though a Simple Delivery default of two days is being forced on me.

Seems like the fastest way around eBay trying to push us all toward shorter delivery times would be to keep doing what you're doing, but add a Bulk Edit check at the end (faster than relisting one by one).

If i package on Saturday and print the lable it alway tells me to post on the Sunday whether Cutom or simple delivery. I have 3 day despatch set too. It is apparently working as intended and just a guide.

I would think it is working as it is because of a coding fault and no testing before going live............
