Can't remove Evri postage option

I've not listed anything on ebay for a while. I came back to it this week and found a lot of changes. I'm using free postage and I want to sent items using Royal Mail Tracked 48. I have switched off the Evri option in the postage settings. However, on the listing, it's offering free postage AND this:

£3.50 delivery in 2–3 days

Express Tracked Delivery

Estimated between Wed, 6 Aug and Thu, 7 Aug

I'm not offering this service and want to remove it. How is it done?

Also, why do I have to manually click every European country in the postage section to remove Europe from my postage options? Why isn't there just one check box for Europe?

If you've opted out of using Evri the options offered to the buyer will be Royal Mail.    eBay just calls it express, etc..   The other will be RM Tracked 48 but ebay offer the buyer a first class service too.  

If you want to sell overseas but not to Europe leave that zone out of your postage options and just go for zones 1, 2 and 3 instead.

Just to add to the above, please note that under certain circumstances, if your preferred carrier can't accept your item, we'll provide you with a label for a carrier you've opted out of in your settings. For example, if your parcel exceeds your preferred carrier's size or weight limits, we may send your item with an alternative carrier.
