I have a couple of expensive items to list, however the postage options don't have enough compensation to cover them, fully, if anything were to happen to them in transit.
Royal Mail says it's only up to £500 on eBay, but I know if I bought postage in the post office I would be covered for way more than that, but then I don't want to leave myself open to false postage claims as eBay provides the labels it adds an extra layer of protection.
Am I missing some option here?

One for customer services to start with
if eBay/Royal Mail set up won’t compensate past 500£ you should be able to use custom postage tell them with special delivery
Take no rubbish either
if they don’t help then list it as 751£ which should route you into custom delivery
then go back and revise listing and change the price
not saying it will work if a sale goes through but that’s what I would do and if it doesn’t work cancel the sale
beat them or join them

Where have Royal Mail stated that?
Ebay provides cover, against loss or damage in transit, up to £750 with Simple Delivery which is the same as the standard compensation available with Royal Mail Special Delivery.
EBay's compensation is completely independant of that offered by the carrier. Usually, where business contracts are concerned the carrier doesn't provide any compensation to the account holder, other than postage, in return for a discounted price.

It says it on the list of options to choose from.
for whatever reason Simple Delivery doesn’t show up when I come to create the listings.
is it because they’re over that amount?

If you are not getting the Simple Delivery flow when listing the item, it is probably because the item doesn't qualify for Simple Delivery. In that case, you can just select the carrier and service of your preference, so they can cover you should something go wrong with the delivery of the item. However, if you get the Simple Delivery flow, we cover any lost or damaged items as part of the Simple Delivery program, so in that case you don't have get insurance, for example.
