Sold a couple of things recently and although I turned the option of Royal Mail off. Buyers seem to have chosen Royal Mail
I have 2 issues
Firstly is that both items when packed are over 2.5cm thick
I also have a problem actually getting to a post office because of my job.
One of the items I sent needed some packing and I am crossing fingers it gets there in one piece but I was told off by the post office person as it was too thick to go in the large letter pile and she said I would have to pay extra. The other I packed for an Evri parcel size and then realised they had chosen Royal Mail so now I have to spend time and money repacking the item and trying to get it under 2.5cm
I wouldn’t mind but they are charging the customer 2.94 instead of £1.55 and still wanting more money
How does this happen
I know the area this current package is going to (repeat customer) and know it has an Evri service
Will I or the customer really be charged more

Buyers don't choose between Evri and Royal Mail. Ebay chooses which service is to be used.
When listing ebay normally suggests a size and weight band(1), if it's wrong you should correct it then.
If ebay doesn't suggest a size and weight, you select a band.(2)
Unless you deliberately select a lighter or smaller band than ebay has chosen in 1 or selected a lighter or smaller band than you should have done in 2; then the label is still valid. Even if you have deliberately or mistakenly selected a lighter or smaller band, the item should still be accepted at the post office. Ebay may surcharge you later.
The packaged item does have to be within the maximum size and weight mentioned on ebay SD.
The buyer should not be charged more, if the specific people handling the package at RM understand Simple Delivery. There were a fair number of reports at the beginning of SD that buyers were having to pay an excess; but no so many reports recently.
You can have SD RM items collected, and they can now bring a label (according to ebay help pages.)
If you can print the label yourself, you could put it in a post box. Up to you, whether you think that's a good idea versus the hassle of going to a Post office. I wouldn't recommend it for anything you consider valuable/too much to lose.

with
"Unless you deliberately or mistakenly select a lighter or smaller band than ebay has chosen in 1, which does not cover the packaged item's size or weight"
i.e. it's fine to select a lighter or smaller band than ebay has chosen in 1, if the packaged item is within that lighter/smaller band.
