No, do not send your own courier as this voids any protection for a refund you have with, eBay's 30 day MBG, Money Back Guarantee policy.
You should use the return label provided in the return case, it's difficult to say where you are having the problem printing the label, can you explain how far you actually get, where the stumbling block is, and someone here may be able to help you.

What is the item? You're describing using a courier?
Are you able to take it to the Post Office and pay over the counter tracked postage? You then add that tracking number into your case details.
Seller only pays for the return postage if you are returning for the reason item not as described, that is, it was received broken / faulty/ not matching description or photos.

Is it a large or bulky item?
If so, you'll need to follow those instructions and use a courier.
You should then be able to add your tracking number to the return details. If there's any problem on that front you can contact eBay and ask them to check the number (when it shows as delivered back to the seller).

“That then gives me options of carriers
Nowhere can I find where to print label.”
Until you have decided on courier, you obviously cannot print s label.
