So I buy a watch from a seller and first he told me around 10 working days, he then message me saying it's posted and on its way so 3 to 4 days, but my eBay is saying paid not sent out, no tracking, so I cancel it yesterday and he denied it and said no but if he sent it out surely my eBay would say scent and gave me tracking details but at the moment it saves paid what should I do

The seller may have bought their own postage.   This is happening a lot since ebay introduced their new "Simple Delivery" system.   Some sellers are not realising they should print out and use the ebay postage label.   The item would not have the seller's tracking on it so it would not be marked as dispatched.

You have 30 days from the estimated delivery date on the listing to open a "not received" case on ebay to get a full refund, so you can afford to wait and see if it arrives.
