I am selling my first item and I won't to send it next delivery because it is quite a high value item I contacted eBay because the label they will generate says 5 days delivery they have sent me this message
.... after the item is sold eBay will give you a prepaid label and once the label go to view order details and click on get the prepaid label and generate and leave the eBay label unused............
They have said to me I can ship the item at the post office and put on the tracking that the post office will give me....my question is will the eBay prepaid label have a tracking number on that will not be used and because I am not using simple delivery I am not covered if the item gets lost

You should be able to change the tracking number to your new postage To do that you still need to generate the original prepaid label. Then change the tracking via the More Actions dropdown menu or View Order Details > Postage > Track Package > dropdown arrow. That needs to be done on a desktop browser. If the buyer paid for it it will be refunded to them automatically in 30 days.
But with Simple Delivery sellers are supposed to be covered for loss or damage in transit. If buyer opened a relevant claim ebay would issue the refund themselves and you keep the payment. That's the theory.

I am paying postage so will I get the refund if I don't use eBay prepaid label.and obviously I will not be using that tracking number with that comes with that label but the one the post office will give me

If you're buying non-Simple Delivery postage you have to pay for that yourself. If you paid for the original unused postage you can cancel it here:

You are using freepost, so you pay for postage from money buyer pays.
