Seller cancelled my order after I won auction.

I placed a bid on an auction for an old Xbox console at the time it was only at £5 (+ £6.55p&p) so I bid £10.55 and left it there.

The next day I received a notification that I'd won the auction and to complete the purchase.

Opened up eBay on my phone yet the system wouldn't let me pay and I received a message saying the seller had cancelled my order on my request.

This is totally BS, I've messaged the seller who won't respond to me, and the Xbox in question has been put straight up on another auction within those minutes.

This is very poor and I'm trying to get some sort of recognition from eBay about this terrible practice.

It is very poor selling and eBay do not like unhappy buyers.

The seller used the excuse, ' Buyer requests to Cancel' because this does not give them any penalties or fees to pay.  You can if you wish contact eBay Customer Services explain you did not authorise the cancellation and were disappointed not to receive your item.  They can place that damaging defect on their account,  it doesn't take many to boot a seller off eBay permanently,  and charge them a fee based on the highest bid you placed.

You can also leave appropriate feedback.

This is the easiest and quickest way to contact eBay Customer Services, for a Call Back option.
