Best way round this, is to message the buyer if they are agreeing to a collection then you will cancel the order this refunds them. You will relist the item as a Collection only item, for them to buy again.
After payment ( cash is no longer allowed) the buyer will bring along a 6 digit QR code for you to scan or manually enter. Ensure they bring this with them , this is your only proof an item has been collected.
If you do cancel and relist make sure that message you send to the buyer, makes it very, very clear the purpose for the cancellation, that is, it is to be relisted again on eBay for the buyer to buy from the eBay listing. eBay read all messages going through their system, so you need to make it clear this is not for an off eBay sale.
