I recently sold an item, 157258708602, for £35 plus £5 postage, but have only £35 available to withdraw. Why did I not get the full £40?

Did the postage get paid for direct from your account?
If not how was postage label obtained and paid for?

The item sold for £37.08 (including BPF) and the buyer paid a further £3.38 for postage.
The item was listed with Simple Delivery so that payment went directly to Ebay for postage. When you look at the item in your 'orders' you will be able to access a postage label or a QR code to post the item. You don't have to buy the postage so you don't get the payment the buyer made for postage,
Look at the item in 'orders' and click on 'order details' to confirm this. The screenshot below is one of my Simple Delivery sales. You can see that Ebay charged the buyer postage but this was never paid to me.

Yes, that's how it works.
