My listing clearly shows "Product out of Stock"

Hi, please advise, I have variable listings they clearly state whether or not a product listed is "In Stock or Out of Stock". The last two sales have been clearly marked as "Out of Stock" products, I have double checked and cannot see what is wrong. Very frustrating as having to cancel orders.

As a private seller you cannot be out of stock and cannot be holding stocks of items for sale.
