I've sold an item for £160 and payed 13.31 postage but somehow only have £120 available in my account

I suggest that instead of looking at individual figures you look at all transactions CREDITS AND DEBITS to account for the difference.

If you are using eBay funds to buy postage, 

It will be deducted from there.

As advised check figures on selling details.
