Are they coming to pay cash on collection after purchasing your item? Cash is best for a collected item.
To mark as unpaid, click on the item in your sold listing.
Top left click on view order details.
On the right from More Actions drop down menu, select Mark as Unpaid.
You may need a desktop browser and not the app or mobile browser to do this. Chrome and Firefox work best with eBay.
