My label wasn’t accepted at the post office. Maybe it needs to be changed to a large label. Can this be done ?

You can't change a Simple Delivery label.  You can cancel/refund the transaction with the buyer's agreement via the dropdown menu arrow for the item on your orders list.  Then relist with correct postage for the buyer to buy and pay again.

The alternative would be to buy and pay for the postage yourself outside of ebay.

You won't be. The buyer has paid for the Simple Delivery label, so when you cancel it they get the refund, not you.

I used my own courier as the label didn’t work.
The item has been delivered and I have proof.
How can I get paid please ?

If you had free postage on your listing and paid for the label you can get a refund here:
https://www.ebay.co.uk/claims/simple-delivery/refund/seller

The payment will be held for 14 days.
