I just sold my first item on ebay which was listed as postage only but changed shipping type with buyer after sale due to item being a bulky item and explaining to buyer i wont be be able to fulfill despatch time period due to payment being held as i a first time seller on ebay. Buyer and I arranged collection as it mutually beneficial and managed to refund buyer for postage through Ebay app.
But I can't get QR code for collection as Ebay app won't let me change delivery options in order section of Ebay app.
The only way I found to change delivery options was by editing delivery options but it has created a new listing.
How can I change delivery options on an order after listing sold?

You cannot change anything on a listing after it has been sold.
If it was originally listed as a posting item then changed to be a collected item, the buyer would not have that all important QR code for you to scan or enter the numbers manually, this is the only proof that the item has been collected and then money for that sale is released sooner.
Without this code, your payout may be held for 21 days before release.
Be aware as a new seller, your payouts from sales will be held for up to 21 days anyway, as a security measure because eBay do not know if after taking the money, you would post the item, they have none of your selling history. So, it is essential when eBay say the buyer has paid, to post the item asap.
If in the future a buyer asks to change a postal listed item for a collection, best to end the item quoting Buyer requests to cancel and relist with the correct collection option. This doesn't affect your seller performance.

Buyer will get his money back if you have cancelled resulting in a refund.
Under the terms of eBay's 30 day MBG Money Back Guarantee, if a seller does not have enough money cleared, that is, showing Available in their Payment Summary, then for any refunds to be made, eBay will use your back up method, usually your bank account to make that refund.
The refund will go back to the buyer's original payment source, and this is where a delay may happen, if they paid with a credit card, the refund can take up to 30 days to appear back in their card account.
Once refund made and transaction for the cancellation made, any original payment holds to you, are released.

Please may I answer several points you made above, because you have been given the wrong information or are not grasping the true facts in some instances.
When a buyer pays and when eBay send a message the buyer has paid, you then must post the item asap. You do not wait for the payout to show available, there is no waiting time for a seller once informed by eBay the buyer has paid. A seller is not paid immediately, and needs to withdraw their payout manually too, when available !
As a new seller your payouts may be subject to lengthy holds, but tracking showing delivery speeds up the payout process.
A collection item means the item is collected from the seller's home and here the buyer must bring that QR code. It is sent to the buyer not the seller.
A Click and Collect option is totally different, this the buyer can select a C & C point near their home, say an Argos store for collection. A seller has to offer this option on their listings, not all do.
It's not eBay holding the buyer's money delaying the refund, but their payment source. Refunds are not instant, if paid with a debit card it can take up to 12 days to appear in that card account, a credit card payment takes the longest, up to 30days to appear in that credit card account.
You are correct a collection item doesn't reach as many buyers, but it's usually only used for large bulky items, say furniture, or delicate items, then its function is perfect!

Not sure what you mean here exactly.
All postage / collection details and there is an option on the listing to offer both , has to be made when listing the item.
After an item has been purchased nothing can be changed on the listing as you can imagine, this could lead to all manners of abuse.
If the buyer wanted to collect a postage listed item the best way forward here would have been to cancel the item citing Buyer Requests to cancel, and then relist as a Collection Only item.
This then also gives the buyer that essential QR code which you must have, as it's the only proof you will have that the item was collected.

Feedback will not speed up your payout as a new seller.
Only that QR code when the buyer comes to collect will do, when you scan the code, or enter it on the left hand side of .... Confirm Collection in your Order Details.
Send the buyer a polite message they Must bring this code with them for the release of their item.

Because eBay guarantees the buyer a full refund if they don't receive their item. This means that there has to be a proper system to provide proof that the item has been successfully delivered or collected before they will release your payment.
eBay therefore requires sellers to use a tracked delivery service, or if the item was listed for collection for the buyer to provide a collection code number or QR code supplied by eBay.
For this procedure to work, the options for delivery or collection must be specified in the listing. For collection, the buyer must also have paid online through eBay checkout before eBay will even release their collection code or give them your address for collection. Payment in cash on collection is not allowed.
Sadly, eBay is rife with fraud and attempted fraud and these precautions are for your own and the buyer's protection, as well as eBay's.

A proper system?
I am here as the selling system was not dynamic enough to suit my needs.
I was given misleading information by a ebay support advisor. I have copy of transcript.
I admit that it was my fault for not just listing item as postage or collection as it closest option to fit my needs.
However all the postage options ebay offered me were all marked as "no compensation" which was a huge concern for me since this listing is high value and heavy and would have needed to be split into 3 parcels due to 30kg per parcel limit.
Another issue was ebay would not let me set "buyer pays postage" for high enough amount to cover postage costs as I was told by ebay app "max postage for this category is set £30" and none of this takes into consideration the cost of suitable packaging materials to prepare this listing for shipping.
I had lengthy discussion through ebay app messages with buyer and after arranging for collection tomorrow after npt appearing on Wednesday vast majority of that discussion has been deleted tonight. I have no way of managing those messages.
Who deleted the discussion between me and buyer?

I have also made sure I have video of controls being fully functional in thrustmaster control panel before collection. Items are tested and working.
There is so much I have had to do which does not seem to be in ebay help documentation.
Again I was pointed to incorrect to ebay.com help documentation by bad ebay support advisor
Have spent more than 30 hours on this listing so this sale doesn't even cover my time.
Absolutely horrendous experience. And ebay collects interest off MY money by holding it for two weeks.

All ebay have tried to "help" me with is selling me their sponsorship to "advertise" my listing.
I got quick sale without paid sponsorship, which i am struggling to be grateful because of the hassle, time invested and horribly long wait after order received for MY money.

Ebay are advertising "free Seller" campaign.
It ain't free. It is a scam. The amount of personal data i have had to share makes it a big data grab. I value my personal data and am sick of companies making money out of my data and yet I don't see a penny of it. All those cookie consents are for ebay to make money. Ebay shopping and selling experience would not be as bad as it is if it were to actually improve the quality of service.
It obvious to me Ebay is cahoots with UK government to bring in digital id and social credit score system like what is used in China
...

I somehow did edit sold item listing to change delivery type but a second listing got autogenerated. This is a bug or exploit, which I stumbled upon unintentionally.
Which then led me to cancel order so buyer could purchase same item using second listing with collection type delivery method.
Thank you for describing what I should have done in rest of your post as it is basically what I did do, though not step by step as described because i edited sold item delivery type.
Knowing my seller performance ratings should not be lowered because of this helps put my mind at rest I ain't going to be kept at untrusted seller status for longer than expected.
I now have two orders delivered or despatched and am nowvawaiting confirmation from both buyers that they have received items as described in listing and in perfect working condition with slight cosmetic wear and tear.
And revisiting that old post after getting a new email notifications today (did you edit it or something) made me realise I really have not did anything wrong, though was able to do something I simply should not have been able to.
