I bought an item on 18th April and estimated delivery given by ebay was 23rd - 28th April, however the seller mentioned in description that it can take a few days to a week to process and dispatch items and as I had ordered before Easter weekend, I knew the bank holiday would have added a day or two to that estimate.
On 1st of May I checked ebay and my item hadn't been dispatched yet, so I messaged the seller to see if it had been sent but not marked as such, or if it was still being processed. I received no reply at all.
On 5th of May, with still no reply, I decided to check their recent feedback and found a few others had issues similar to mine and had to get ebay involved. At this point, I decided to try and cancel the order as it still had not been marked as dispatched (If it matters, I chose the 'Did not arrive in time' option as it seemed the only vaguely relevant option to pick from). Ebay said seller had until 9th May to approve or decline cancellation. I've just checked my emails today to see that seller declined cancellation on the 8th, though I still have no reply to original message, nor any new message from seller after they declined to cancel.
I'm not sure what to do at this point and have had to buy the same item from somewhere else now. I don't know whether to send another message, wait to see if it finally gets sent out after the weekend, or do what the others have done and get ebay involved to get a refund. Any advice would be appreciated.

You have 30 days from the original estimated delivery to start a "not received" case on ebay to get your money back. Do not let that deadline pass.
Select "Report an item you didn't receive" on here:

The option to escalate it will appear 3 complete working days later. Then your money will be refunded.
The seller can still get in touch with you but do not close your case on a promise.
