Dispatch by 7th Jan. Delivery date shown to buyer 3rd Jan ?

ebay.co.uk - So for the holiday period I moved the dispatch/handling time to 4 working days

However for example an order placed today shows dispatch by 7th Jan - which is correct however ebay are showing the delivery date to buyer from the 3rd of January!!

Anyone else have this problem?

Obviously I contacted ebay via chat but was like speaking to a brick wall

It is the final  date for delivery that matters. Have you dispatched as the dates that apply would be advised to buyer after marking as dispatched.
