You can but your dispatch rating will suffer. It's better to cancel/refund (via the dropdown menu for the item on your orders list) with buyer's agreement and relist nearer the time for the buyer to buy and pay again.

Thanks. Kind of annoying bearing in mind, Ebay checked his message and repiled with, "Your buyer has reached out about their order. Since you used Simple Delivery, we'll work with your buyer directly on any delivery related questions."
I don't care about dispatch ratings, so, I simply wait a couple of weeks and request a new label?

That message eBay send, causes more trouble and confusion than its worth!
For some reason , any message between buyer and seller, even if you sent a message.... ' Thank you for your fast payment' would trigger that very same message.
In my humble opinion it's badly worded and sent unnecessarily a good 90% of the time ! 🤔

A simple delivery label is valid for 14 days unless it has a post by date on it.
If the label is not used or expires another cannot be cretaed and the buyer is refunded the cost of the label if they paid for it,if seller paid (free postage) then the seller must request a refund for the unused label but this has to be within 14 days from sale.
You really are best cancelling and relisting so the buyer can purchase again nearer the date requested

Well you should. If you had 100s of sales in the last 12 months, one late dispatch would not affect you much, but you don’t you have a very low number, so one late dispatch would be a high % and could put you below standard with restrictions on selling.
It is also wrong to think any human reads your messages, AI or robots just identify words and respond accordingly, usually saying all the wrong things.
