I have a set of 86 pieces of David Mellor rosewood cutlery from the 1970s in good condition,
I have seen a 6 place set sell recently for £325 but I have 10 of everything plus fruit knives, cheese knife, serving spoons and teaspoons. Should I split it into a six piece and then a set of extras - steak knives etc. or try to sell it all in one ?
is it best to sell in an auction or set a price?

Oh that is a good question, but no one can give you a 100% defiitive answer as to which way is best, to list those great items.
Personally, I would think a 6 set, and a 4 set would be a more attractive , useable, sale(s).
I don't suppose these items came in a canteen? If you have the ' box' to hold all these items, the canteen, then probably best not to split the set up.
Have you checked if others are selling the same items, if they are selling better in lots of 6 / 4 / or 10 ?

Ebay does have a strict knives policy so, for example, you would not be able to sell a set of steak knives alone.
Bear that in mind if you split up this set.
The following knives are allowed:

All I can recommend is when listing if you select an auction format, is to list it for the lowest amount you are happy to receive, because it cannot sell for less.
If you know the price you are happy to accept then you can list it in a Buy it Now Format.
