Why is there cash on collection only option on the item I am selling?

It's a motorbike - PayPal would be an unsafe payment method for you to accept, the payment can easily be recalled.

Payments in the motors category are cash on collection or, if you prefer online bank transfer on collection, you can tell your buyer this.

How would I offer the bank transfer? It appears that eBay do this but again
not on a motorbike?

eBay don't collect any payments for a motorbike or car.

If you want bank transfer then let your buyer know and they can pay via online transfer when they come to collect.

Buyers do not pay through ebay for motors, it is all arranged direct between buyer and seller.  You would need to give the buyer your bank details.
