I recently sold an Pokemon ETB box to poketyler10 for £70. This was delivered. However, he cancelled the order and ebay refunded him from my balance. What happens to the item?

That screenshot shows that ebay covered the refund. It will not come off your balance and you will not receive the item back.

We don't have enough information to know what happened here, but buyers can't cancel purchases. However they can claim a refund through eBay if an item doesn't arrive or arrives damaged.
As this was simple delivery, if the item was damaged in transit it was eBy's responsibility to refund them. If it wasn't as described you would have been responsible. So either eBay gave the buyer a goodwill refund (unlikely) or they buyer made a credit chargeback but eBay met the cost because you had proof of delivery.
In either case, eBay has refunded at their own expense. If they have really taken it from your balance as well you will have to contact customer support!

It may be that the message on your orders has not been updated to account for Simple Delivery seller protection.
If the refund does actually come from your funds you need to query it with ebay.
