How on earth i'm i getting outbid 30s after the timer finishes? Happened twice to me in the past 3 days and it's a utter joke

You are looking at the wrong ebay page, and/or your device clock is out of synch.

Look at the complete bidding history page, including automatic bids, there you will see the timing for the auction  to the second, not just the minute.  You will also see that all bids were before the auction ended, including the one that beat yours.

It would have helped to know the item number to view the bidding history, but the most likely answer is that the clock on the bidding page only gives the ending time in minutes, whereas the one on the listing page includes seconds. If you compare the time of the winning bid to the end time in the listing page you will almost certainly find that it was made within the time limit.

In some cases there can be other reasons for confusion but from what you describe the above seems the most probable.
