I bid on a coffee machine at 300GBP. It had a Buy Now tag of 500 GBP. Since I was the only bidder, I won the bid, but as soon as I asked the seller to send me the address, he told me he had sold the coffee machine. I made payment in response to eBay reminders, and seller cancelled the bid with reason 'Buyer failed to accept to pick-up'!
I am confused. Should I open a case with eBay, or do I have grounds for sueing eBay?

You have no grounds for suing ebay.
If your refund from the cancellation fails to turn up you will need to open a case for item not received.
If it was a collection item you wait 7 days, if posted, then wait until the day after Ebay's estimated delivery date.
That isn't a cancellation reason I recognise.

If the sale has been cancelled and a refund has been processed, there is no case for you to open.
Sellers are not supposed to do this and you can report the seller to Ebay and leave the seller negative feedback. You can't compel the seller to complete the sale.
I am not sure what you think you could sue Ebay for?
There is a (probably complex and expensive) legal route where you can potentially sue a seller for not selling you the item but, if you plan to try that route, you should take legal advice.
