Why ever do you need to offer choices, just do what you think is appropriate. Buyers will always choose the cheapest, which can become expensive if quoting courier and buyer lives in Scotland, or even the Isle of Wight, as you cannot ask for more. You can always add in description a note to the effect that if a different method is required please ask for cost.
I find that Royal Mail offers services that suit me and same cost to all parts of the UK unlike couriers who may charge about 3 times their basic charge for remoter parts of the UK.
I will always avoid letting ebay tell me what method to use, if that becomes impossible then goodbye ebay.
