I won an item on the 7th Feb and payed straight away in full but the item hasn't been sent yet and the seller hasn't replied to any of my messages what do I do
You don't know for sure that the seller hasn't posted the items, not all sellers mark as despatched.
If it's the bundle of clothes then the listing says the seller will post by 2nd class signed for within 3 days of payment being received and ebay added an estimated delivery of 5-6 working days. Wait until Monday/Tuesday, try the seller again if still not received. If still no joy then take a look at ebay's money back guarantee.
