But - unless you eat your fresh carrots raw - you have to cook them.
And such cooking means - boiling them in water. So the fresh carrots get put in water, just like the carrots in the tins.

Each to their own but tinned carrots do not taste the same or have the same texture as freshly cooked carrots. Much like tinned peas, tomatoes or potatoes - none of them taste like freshly cooked vegetables. However, you seem to want to negate my comments so I won't bother making any comments anymore. I was answering the OP's question, not wishing for you to pick an argument. Goodnight

i think the eating of tinned veg is something of an acquired taste
mainly those who were brought up eating fresh veg really cant get used to the taste that comes with tinned veg
i knew someone who had only ever eaten new potatoes from a tin, when i gave her fresh new ones she wouldnt believe they could be the same veg
each way of preserbing food whether it be canning or freezing alters it from the fresh fruit or veg
i prefer fresh but really prefer frozen peas, canned sweetcorn and canned mushy peas

Tinned carrots are nothing more than orange mush. Even soggy home frozen ones are better than that. We grow our own and have been unsuccessful at storing them, so I slice, blanch and freeze. As I said, not really nice enough to have with a dinner, but fine for stews and casseroles, so they don't get wasted.

If fresh carrots go black. but are still firm. peel them.. its usually only the skin thats gone black.. inside is fine....

You've no idea how old your "fresh" carrots are so storing them can be hit or miss.
Before the common usage of refrigerators and freezers, when we used to grow all our own stuff, things like Potatoes, Carrots, Turnips and root veg were stored in what we called a "Tump", other people call it a "Clamp". You have to make sure none of the things are damaged when lifting them.
The idea was to keep them frost free but cool, in the dark and slightly moist.

It's strange, either they go snotty at the ends or black. I buy them fresh as I can but I've started only buying loose ones now so I get only a couple at a time. If I buy a bag they were going funny before I could use them all. They seemed to make a lot of condensation so I was using kitchen towel underneath them.
I'll try under the sink in the dark, but I think they went black under there in 3 or 4 days....

I can honestly say I have never had carrots go black. Is your fridge the correct temperature?

Why eat carrots anyway?
They don't seem a natural food for humans. If we just stopped eating them, would we suffer any ill-effects.

oh no I couldn't give up my carrot and swede mash.....
the fridge is OK but they go black, so I put it in the dark...same thing.
they're Mr T's carrots but Al*i ones are worse they won't last 3 days sometimes!!!!
I used to get some brilliant bags from JML that stored them brilliantly but you can't get them now.
I just buy the odd couple of carrots as I need them now.
