Mine is:
Carrot cake, closely followed by every other type, except coconut!!
Pudding (or dessert depending where you come from, ha,ha) is
Sherry Trifle; then Apple crumble and cherry pie.

My favourite cake is cheesecake and it's a toss up between apple pie and custard and apple crumble and custard for a pudding.

Having a glut of courgettes and running out of ideas as to what to do with them (friends and family are sick of being given them) I made a Courgette and Raisin Loaf today and it tastes absolutely scrummy.
My all time fave though is Lemon Meringue (droooooool)!

MY FAVOURITE PUDDING BANANA SPLIT WITH EVERYTHING ON.
IM A BIG CAKE AND PUDDING LOVER. I ALSO LOVE APLLE OR RHUBARB CRUMBLE WITH ICE CREAM.

I love banana custard for pudding and cake, well I'm not heavily into cake
but I like fruit cake and coffee sponge. I'm told I make a mean coffee
sponge!
I've got a new keyboard and it feels as if all the keys are little trampolines
for fingers, they are all bouncy. No crumbs in it though (yet).

Favourite cake has to be coffee and walnut
but as for favourite pudding it's bread and butter pud not especially grand I know but for me it brings back so many happy memories with my nana that it wins hands down

Fluffy, yes, it is home made. I usually make it for my birthday as it is the only cake I will get so I make sure it is my fav cake. 🙂 I will have to hunt up the recipe and the conversions so give me a few days. 🙂

Fave cake is Lemon Drizzle or my Dorset Apple cake & favourite pud is Crème Brulé or Tiramissu. I did make Eves Pudding for the family this weekend & it was a big hit!

I finally found the converted recipe for the Black Magic cake and frosting. 🙂 How much toasted coconut is totally up to you. I toast mine in a dry frying pan on low heat until some turns lightly brown. Stirring all the time. Put into a bowl to cool. Then sprinkle on the frosting.
I usually make the rectangular sheet cake rather than the layers. Also I think the cake is better served chilled from the fridge. 🙂 Enjoy.
Black Magic Cake
400g granulated sugar
226 g plain flour
100 g Good Dutch Cocoa
2 teaspoons Bicarbonate of soda /baking soda
1 teaspoon baking powder
1 teaspoon salt
2 eggs
250 ml buttermilk or sour milk*
250 ml strong black coffee OR 3 teaspoons powdered instant coffee plus 250 ml boiling water
125 ml Sunflower or corn oil
1 teaspoon vanilla extract
Heat oven to 180 C. Grease and flour two 9-inch round baking pans or one 13x9x2-inch baking pan. Stir together sugar, flour, cocoa, baking soda, baking powder and salt in large bowl. Add eggs, buttermilk, coffee, oil and vanilla; beat on medium speed of mixer 2 minutes (batter will be thin). Pour batter evenly into prepared pans. Bake 30 to 35 minutes for round pans, 35 to 40 minutes for rectangular pan or until wooden pick inserted in centre comes out clean. Cool 10 minutes; remove from pans to wire racks. Cool completely.
* To sour milk: Use 1 tablespoon white vinegar plus milk to equal 250ml.
Marshmallow frosting
2 egg whites
150g granulated sugar
75 ml golden syrup
Pinch of salt 1 teaspoon vanilla extract
Beat the egg whites with the salt, adding the sugar until stiff peaks form in a heatproof bowl. In a saucepan bring the syrup to a boil and then in a steady stream pour into the egg white mixture beating with the electric blender. The heat of the boiling syrup will cook the egg whites. Beat in the vanilla extract.
I sprinkle over some toasted coconut or just plain coconut.
Store the cake in the refrigerator.
One warning I have with this is make sure not to over fill your cake tins with the batter, as this cake really rises high.
