Tonight it is pork and apricot casserole which is, at this very minute, cooking away and smelling heavenly. It is a very tasty meal and quite cheap. I will even be nice and give you ladies the recipe.
4 pork chops cut up into small pieces
2oz seasoned flour
2 med onions chopped up
1 glove garlic
1 tablespoon tomato puree
1 1/2 pint veg stock
4 oz dried apricots (cut up as you wish)
1 teaspoon dried mixed herbs
Fry onions and garlic until soft. Add in the pork (which has been covered in the seasoned flour) and fry for a couple of minutes. Lower the heat. Add in the tomato puree, stock and any remaining flour and stir. Add the apricots and mixed herbs. Stir all together and bring to the boil. Here you can place into the oven at about 180 for up to two hours or, as I do, I transfer into the slow cooker and leave to simmer away all day.
Serve as you wish. I tend to buy a small tin loaf and take out all the inside bread and serve the casserole in the loaf of bread so by the time you have eaten all the meat, then the bread is soaked and ready to eat.
In fact in todays casserole I have added carrots....but you get the gist.
A relatively cheap meal, prepared in the morning, cooked all day, smells the house lovely and just ready to eat when you want, and with what you want.

I am having a Sausage and baked Bean Slice with Chips!!!. An easy meal and a individual dessert to follow!!!!!!!!!!!. Ohhhhhh i brought some naughty cakes today to treat myself ,,,,,. Ohhh well im going to enjoy them.!!!!.

Also went out to lunch today, so am having toast and marmite, the boys are having fish and chips and peas, because I forgot to take anything out before I went to work, oops.

Chicken breast, roasties and mixed veg. Was going to have stuffing but I checked the date on the packet first Ummm, well, new for Xmas.

We just had mashed potato, Yorkshire pudding, kidney and liver, sprouts, cauliflower, carrots, curly kale and gravy. Rather too much, could have fed four!! He then had yoghurt.

Went to the pub at lunchtime and had steak and chips - was yummy. Might have some toast later if I am hungry.

I made a pasta dish using some leftover chicken and some veggies. Had a bit of bacon too that I added. 🙂 And cooked some garlic bread to go with it. 🙂
