Sundays, succulent sustanance

This evening we are having, slow roasted pork with whole roasted red onions, (I made a mistake on my shopping order and ordered 3kg instead of 3 onions), purple sprouting broccoli, kale and baby carrots. Oh and roasted potatoes.

Roast pork with apple sauce and gravy, roast spuds, leeks in sauce, sweetcorn, and brussel sprouts. Lemon meringue pit for pud.

 

I am stuffed, but it was really good - "him indoors" surpassed himself.

We had hot pot and mixed veg for lunch and we are having turkey salad for tea.

I did a roast chicken with roasted med veg along side of it. With fennel and lemon. 🙂 It was yummy!!!

Life is too short so enjoy it while you can!

I just had egg, bacon, chips and for the first time ever, a venison burger.  Didn't think much to it at all. Woman Sad

Roast chicken, roasties, yorkies, mashed swede, carrots & roasted leek, mushrooms & baby plum tomatoes. Rest of the chicken will be tomorrows chicken salad and a frozen chicken korma.

crispy slices, fishcake and beans...bit weird really, that's par for the course lately!!!

not a clue what's for tea.

gina question never heard of roast leeks how do you do yours???????please they sound lush.

I just bung them sliced, in a small baking tin (I normally use a victoria sandwich tin), throw in any left over veg (I had mushrooms & baby plum tomatoes, which I cut in half), tiny bit of oil, (sometimes I sprinkle over a handful of parmesan) & then just put in the bottom of the oven for about 40 mins whilst the rest of the dinner is cooking. Just toss it around in the tiny amount of oil as you don't want it greasy.If I don't have leeks I'll use chopped onions

good way to use up anything lurking in the fridge. I have used any cherry tomatoes or sliced large tomatoes before

That comment re the onions reminded me of the time that my aunt (who lives on her own but orders her groceries on line) ordered 8 bananas, Tes*o delivered her 8 bunches of bananas.  She didn't realise that she could have sent some back, she was phoning me up for ideas on what to do with them!

Banana bread is yummy, especially if you toast it in the morning and put butter on it yumyum.  Here ia a recipe for it.

We had sea bass, creamy mash, carrots n sprouts, we seem to be having fish last 2 Sundays, I think we are rebelling at all the meat eaten over festive season. 🙂

I sliced up most of the onions and put them in the freezer, the roasted ones were lovely, I must do them again.
