1904 high tea

hi all i work in a residential home for the elderly and in june we are having an open day for all and we have decide to go back to 1904 as that is when the building first opened as a hotel and we are having a marque and we are serving high tea to all the visitors.and i am cooking all the cakes etc.any ideas from all you all on what i can bake for them. we are also all dressing up in period clothes so are a lot of the residents.

I think 'cold collations'  were popular (cold meats, raised pies etc)    And I also think the wartime fancy of tinned salmon sprinkled with vinegar sandwiches may have hailed from Edwardian picnics and would be a different taste  (its very nice, honest) 


 


Scones with jam and cream would hit the spot, I'm sure.

thanks elphaba  nice ideas but i may be good at cakes in general but the only thing i can never master is shortbread.but the activity's coordinator has agreed  to do it for me but will suggest lavender.:-)

i would have suggested things like jellies - from proper moulds, decorated with fresh fruits


blancmange even


 


and you cannot beat a good sherry trifle


 


icecreams and sorbets


 


they would probably used fancy glass dishes

will make sure there are plenty of both types ready for the coach to turn up.and cg macaroons are small like meringues of different colours.:-)

I love the look of those multi coloured plates of macaroons.


 


plain cakes are fab if they are made with good ingredients. I think too much fancy and fancy filling or shed loads of buttercream is just sickly.

i did not have much success the first time :-(but the second try were more successful but me thinks still need some practice.?:|
