hi all i work in a residential home for the elderly and in june we are having an open day for all and we have decide to go back to 1904 as that is when the building first opened as a hotel and we are having a marque and we are serving high tea to all the visitors.and i am cooking all the cakes etc.any ideas from all you all on what i can bake for them. we are also all dressing up in period clothes so are a lot of the residents.
help please 😄

DEVIL'S FOOD CAKE
Miss Bashford
4 ounces of chocolate,
1/2 pint of milk,
1/2 cup of butter,
1 1/2 cups of sugar,
4 eggs,
3 cups of flour,
2 teaspoonfuls of baking-powder.
Put chocolate in milk and cook in double-boiler till smooth and thick (about 5 minutes), and stand aside to cool. Beat the butter to a cream, and add gradually the sugar and yolks of eggs; then the cold chocolate mixture, and add the flour, which has been sifted with the baking-powder. Add the well-beaten whites of eggs and flavor with vanilla. Bake in layers and put together with soft icing, to which add chopped figs or nuts.

1904.....Edwardian Sponge Cake....Similar to Victorian..but with full fat everything....

i think i am supposed to dress so i look like Mrs bridges in upstairs downstairs.i am going to try macaroons this weekend .i will show you pics when i have done them and then they will be added to scones fruit cake batten burg little fruit tarts and the chocolate brownie cake as above on post 2 then if anyone else gives me suggestions.so will be busy.

Hi Cookie, I hope this prints ok - I'm not very techie. I've been making this for 20 years. Does rise, then settles. So the bottom is delish, gooeyish, choc cake - the top will sink (macaroon) and browns slightly - almost meringue.
It's not a big cake like a sponge - but cuts easily and goes down well - you don't need a massive bit because it's nice and rich.
And a doddle :-x I pipe double cream over the top - and then grate chocolate.
I can always type it out for you and PM it but have to be tomorrow - feeling a bit tired. xx.

thanks for the ideas :-)and firstly i am only making the sweet side and other chef is doing the savory stuff .cucumber sandwiches are boring compered :-)to choc cake and macaroons and scones and jam and cream and battenberg and friut cake .............i have just put on 2 stone.:^O:^O.
you are all welcome on the coach but not sure how many of you would be allowed to leave]:)
