Contacting eBay support

EBay has stepped in early and closed a transaction whilst buyer and seller were making other purchases so all items could be sent together. Now buyer can't pay for  original large item but payment has been taken for the multiple smaller add on items. How does either party contact eBay to ask why they interfered when not required

They didn't interfere.  What happened was that the seller had automatic cancellation set up so that the big sale was cancelled,  probably after 4 days of non payment. 

The seller needs to turn this feature off.  

If the buyer still wants all the items the seller needs to cancel the remaining sales, refund the buyer, and relist all the items together.
