Ebay counts it as sold as soon as the buyer wins an auction or hits Buy it Now. Paying is a separate process.
As long as you cancelled for non payment there won't be any selling fees to pay.

When you cancel for non payment, you have to wait until 4 days after the sale has been agreed and cancel using 'buyer did not pay'. As long as you do that, there are no fees to pay and if the buyer leaves feedback, it can be removed.
You don't need to send the buyer reminders.
Ebay will bombard them with reminders to pay.
Even if the sale is cancelled, it still appears in your sold items.
You do seem to have relisted the coat twice, with two different titles and prices. Ebay do not allow duplicate listings.

unless you canceled with - buyer did not pay - eBay don't know you have not been paid.

EBay thinks I sold an item.
You did sell the item. It is unpaid, not unsold.
How did you cancel the sale? If you used the correct procedure to cancel for non-payment you would have received a refund of your final value fee (and the buyer would have been penalised with an unpaid item strike).
If you cancelled it by any other way everything will depend upon what reason you gave. If eBay treats it as a seller-initiated cancellation you will not receive a fee refund, and will be penalised with an account defect. Reasons which eBay accepts are that the buyer asked to cancel, or there was a problem with their address.
