In addition to what has already been said, if you don't want to have to end your listings and then relist everything from scratch once you get back from your holiday there are two possible options as to how to get around the problem without taking your listings down.  One way around the problem would be to revise every live listing so that the asking price on each listing is so high that nobody in their right mind would agree to buy the item for the price advertised, then when you return from your holidays revise all the listings again and reinstate the proper prices.

Another option which you may be able to consider would be to ask somebody to monitor your account on your behalf during your absence, whether that be a member of your family or a close friend who you know you could trust to despatch any sold items within your designated despatch times, and who would also be prepared to deal with any issues on your behalf until you return.  If you could find somebody who would be willing to monitor your account during your absence and despatch any sold items within your stated despatch times, and deal with any issues should they arise, then perhaps you could consider doing that instead, in which case you wouldn't need to delete all of your listings and relist the lot again from scratch when you get back from your holiday.

If they are BINS, you can end them all in one go, so no great effort involved.

When you return you can again relist in one go. Very simple to do and only if you were away for over 60 days would it be a problem, unless you use the seller hub when you would get 90 days.

You can't freeze your account.

If you had a shop then you would have the option of holiday settings.

All of your listings are BINs which means a buyer can hit the BIN button at any time of the day or night, pay immediately and then expect to receive their item. If you don't want to risk coming back from a lovely holiday to find your account trashed by INR cases and neg feedback, then end all of them before go and relist when you return.

You won't be able to use holiday settings if you don't subscribe to an eBay shop, so best to make sure that all listings are ended well before you go away, and then relist when you get back home.
