I've had an offer for a cap I'm selling, on the condition that I offer click and collect. I'm happy to do this but when I go to revise listing and go to Delivery, I can't find an option to offer this anywhere. Any idea why?

click and collect is added to listings that qualify by ebay, it isn't something a seller can do at the listing level
go to:-
my ebay >>> account tab >>> site preferences and make sure you are opted in
and if your items are eligible the option will be shown on your listings
