Buyers have organised couriers to collect items I have listed as collection only.
This is fine by me but my ebay account is asking for a collection code which obviously I dont have to show its been delivered/collected.
How do I complete this and mark it as delivered, in my account.

If buyer paid by paypal, they can claim not received and get a full refund. You have no tracking to prove delivery.
Collection items should be collected in PERSON, allowing a Courier is unwise as the buyer has no Buyer Protection, but they don't know that and could still open a case and it would then be up to you to try and convince ebay that is was collected by a Courier.
Chances are that if you had to contact ebay they wouldn't know the rules either and you would end up being forced to refund.
The code is for buyers and sellers who are using the eBay mobile app. If you don't have the code then you can manually override the system and mark the item up as having been paid for and despatched by logging onto eBay via a computer or laptop.
Once you have logged onto your eBay account using a computer or a laptop go to the Sold Items section of your All Selling page. Locate the item in question and click on the £ icon to mark the item up as having been paid for, then click on the envelope icon to mark the item up as having been despatched. If you use that method then you won't even need the code.
The code is for the app. You can mark as dispatched using a PC or laptop. On My eBay via More Actions, right of item on your sold page. Or on seller hub page click on the item, then top left > Mark as Dispatched.
