If you've set up a listing as Collection In Person Only then although you would still have to include PayPal as a payment option you can put in your listing that you would prefer to be paid in cash, and there is actually an option on the Advanced Selling Form in the Offline Payments section for you to make this option available to buyers should you wish to list something on Collection In Person Only basis.  It's the second option from the bottom on the list of Offline Payments.  If you decide to take advantage of that option then type something in the empty white box beneath it along the lines of "Should you wish to pay in cash I have set the listing up so that you can select the option to pay via cash on collection when you are going through checkout."  The message in that white box would automatically display in your advert when it goes live, and if somebody did prefer to pay in cash on collection, as opposed to PayPal, then that comment may well help to steer them in the right direction and make them look for the "I'll Pay In Cash On Collection" option when going through checkout.

Although there is not much else at the moment that you can do to improve your chances of being paid in cash, apart from if you're listing something using a Classified listing, which is better for things such as vehicles, at present PayPal has to be included on almost every listing with the exception of Classified listings.  However, eBay are currently in the process of switching all sellers over to eBay Managed Payments, starting first with business sellers, then once all business sellers have been switched to eBay Managed Payments eBay then intend to start switching private sellers over to eBay Managed Payments as well.  Therefore, there may not be much that you can do in the short term, but it won't be too long now before PayPal has been made obsolete once all sellers have been switched over to eBay Managed Payments, in which case you won't have to worry about PayPal holding your money.  Having said that, however, there have been reports from some sellers who have already been switched to eBay Managed Payments that eBay are actually taking ages to release the funds to their bank accounts, so at the end of the day you may not be any better off on eBay Managed Payments than you currently are on PayPal.

You have to offer Paypal as a payment method, there is no getting away from that as a UK private seller.

Once you have been selling consistently for a period of time buyers' payments will be available immediately.
