I'm trying to sell a 1:200 scale diecast model, and I can't see anything in the content I've entered that might make it seem like an NFT! Any advice on what I might be missing here?

We can't see every single box you have ticked in the whole listing form, but from what you've shown, I can't see how this could be mistaken for an NFT.
If there is DEFINITELY nothing in the whole form which suggests it may be an NFT, I can only suggest you contact eBay customer services. (Some people have noted that problems seem much more plentiful of Friday mornings, which is eBay's "maintenance day" - you may find it all works fine tomorrow.)
Probably nothing to do with your problem, but almost every poster here would advise you to avoid using AI descriptions, like the plague. The descriptions are all pretty much the same, no matter what the product is, and they often go wildly over the top. Is your model really a must-have for all aviation fans? No it isn't because many aviation fans don't even collect models, preferring books, manuals, DVDs and personal experience. It's not difficult to write a much better, more realistic description yourself.

Thanks for your reply - and yes there's nothing in the rest of the form that I've ticket that would make it look remotely like NFT.
Fair point on the AI description! Laziness got the better of me.

Try changing/re-wording your title. Occasionally the eBay automatic system will, for unknown reasons, pick up on a word in the title that it does not like, or which it wrongly interprets. It has happened to me a few times over the years.

We have a system here where I work that has a secret list of 'forbidden' things and I literally have to sometimes add one word at a time (I have to keep pressing 'update' after each one) when it rejects a sentence. I'd do the same with the title.

Try changing your title, a key word title builder has come up with this recommendation.

Obviously change the details to what fits give that a try
