Just listed another item and for delivery I selected customised selecting small parcel and up to 2KG that cost £3.55. I’m offering free postage on item and thus will pay this cost.

The fact I clicked customised to select above, does this count as using Simple Delivery?

Royal Mail tracked 48 now insure to £75 and simple delivery protects up to £700 via eBay.

No, using custom postage doesn't count as using Simple Delivery, even if purchased through eBay, so your item will only be protected against loss or damage up to £75.
