Is the item bigger or heavier than the dimensions stated?
Did you buy additional compensation if the item is valued at over £20?

The baseball cap?
Unless you have flattened the cap before packaging, the package is wider than 16cm so it is the parcel is larger than the size stated on the original quote, and has pushed it into the next size up, which obviously costs more.
If you don't input the *packaged* weight and dimensions correctly when listing, you will end up having to pay more postage out of your own pocket
You must correctly complete the item weight and dimensions section when listing, but this must be the *packaged* weight and dimensions. As you have discovered, you are now going to have to pay the extra out of your pocket for the next parcel size up, as the parcel is more than 16cm on the smallest size.
At least it was only a few £, but a lesson learned...

Its probably due to the fact that your buyer has a postcode where evri charge a premium eg a BT, IV,AB, GY postcode etc. Ask the seller if they mind the item being dispatched Royal Mail where there is no such premium and its a single price for the whole of the UK and Channel Islands.

One of the problems with using Evri is their remote locations supplement. Sod's law when I offered Evri it seemed like all of the buyers were in NI so Evri charged another £2.50 or so. If you want to always use Evri but don't want to have to pay that then you either need to exclude remote locations (hard to do completely as eBay's locations don't match up with Evri's exactly), or set up a postage rate table. Or, if you can, use Royal Mail Tracked 48 at £3.39 online price when it's cheaper than Evri, which it will be for NI etc.

Thanks for that.. I was posting from NI & Evri came up as cheapest option when I put dimensions etc in . Buyer obviously chose this but Evri increased the price quoted. I will use RM only from now on. Lost sale though as buyer wssnt happy to pay the extra postage!

Evri aren't worth the bother, you should have used RM all along especially given your location, but also the buyer would have rightly expected any shortfall to be made up by the seller, I'm afraid. If a buyer is able to buy your items, they expect them to be delivered, the service not the price is what you've promised them.

If you live in NI then Evri will apply the supplement to all deliveries to UK mainland. Only sales within NI will get their standard fee. Based on populations sales within NI would be around 2% of your sales - I don't think Evri works for sellers based in NI.
As a seller you cannot ask the buyer to pay extra postage after purchase for the already-agreed service. While I know some of the courier services and prices are not obvious to private sellers / those who aren't sending lots of parcels, as a seller it is your job to know the rates, or be prepared to cover the extra yourself if you overlook something.
