Hi,
Very much more a buyer than a seller usually.
I've got a one off item to sell (a collectors item book).
I only want to sell and post my item within my own country (UK) just to keep it as simple as possible. Obviously I will state this in CAPS in the listing.
Is this possible? By simply not selecting to activate the "International Postage" button when I do the listing, is this enough to ensure the item cannot be bought by someone outside the UK? Or will it still be possible for someone to do so?

You need to select the countries you do, and do not wish to post to in your Site Preferences:
https://www.ebay.co.uk/ship/prf
On the left sidebar select Postage Preferences, scroll down to Exclude Postage locations.
There is a little box at the bottom of that list to add this to any item listed , with no bids.
You may need a PC / laptop and not the app or mobile browser to do this. Chrome works well with eBay.

I suggest you also use your buyer blocks to prevent buyers from elsewhere trying to buy your item.

Using a desktop browser, set your Buyer Requirements with this page, tick the box that says 'Block buyers whose primary delivery address is in a location I don't post to, then the box that says 'Apply above settings to active and future listings', then click on the tiny Submit link, bottom left of this page:

Then, if you've no international postage price and method on your listing they won't be able to bid/buy.

I’d just like to add to the excellent advice that’s been given, there’s no need to state, let alone IN CAPS, Uk buyers only in your description.
As a buyer I’m very put off by sellers who post caveats, warnings, statements about what they will or will not do, in their descriptions. Please consider using your settings for your selling preferences and keeping the item description for just that.
