Hi Everyone,
Looked everywhere and instructions are outdated, i cannot find anywhere how to do this.
I've got a couple of trainers to sell, all with the same shoe but different sizes, and i cannot to my life find the option to choose various sizes in one listing, not even when selecting just buy now.

You cannot do this on a private account.

From 20 Jan 2025, Multi-buy will become exclusive to business sellers, and no longer be available to private sellers.

Private sellers can still set up a variation listing, it's multi buy discounts that can't be added unless you're trading on an eBay business account.
You need to use a desktop browser to set this up, you can't do it with the app.
At the very top of the page you’ll see the Photo & Video fields when you're setting up your listing.
The option to set variations is located between the Item Specifics and Condition sections, it'll appear once you've selected to list in Buy It Now format in a category that supports a multi variation listing.
If you still do not see the variation option between the Item Specifics and Condition sections, click on the 3 dots on the upper right hand side of the listing form and then select the settings gear icon and click on the variations toggle so it turns blue.
There are limited categories that support a variation style listing, if you're trying to list in a category or sub category that doesn't support this listing format, it won't appear.

Dave at eBay disagrees you cannot list variant listings on a private account but you can list multi quantities
I've seen some posts on this and there seems to be a bit of confusion. Private sellers are allowed to list with multiple quantities of an item but the option for multi variations in a listing has been removed.

You can set up multi quantity and variation listings on a private account.
There's no announcement that mentions that variation listings have been removed for private sellers (there is for multi discounts).
I can still set up a variation listing on a private account.

To clarify, the change for private sellers was the removal of the multi buy discount feature, though I feel that this may be causing some confusion and people are getting mixed up with a multi variation listing and the multi buy discount feature.
From 20 Jan 2025, Multi-buy will become exclusive to business sellers, and no longer be available to private sellers.
On 20 Jan 2025, all active listings using the Multi-buy discount tool will automatically become multi-quantity listings, and the discounts will be removed.

Better tell Dave in this weeks chat, he specifically mention multi variant not multi listings.

Yes, that's the post I went back and read.
It's multi buy discounts that has been removed for private sellers.

As Dave clearly said variants nothing about discount or multi.
Need him to clear this up he seemed to think we are all confused,
My initial understanding was basically what @*vyolla* understood that changed based on that chat message from Dave.
So if you can why can the op not, there must be a difference or a glitch or Dave got it wrong and he is confused.

I set up test variation listings yesterday and this morning for trainers (same as the OP wanted to do) and for rings (jewellery category).

Not sure, I am using a PC, I don't use the app so can't try that
I have just tried one for trainers on my private account, brand new in the box with various sizes and it allows me to add variations

The OP probably just hasn't selected the variation switch on the listing or is trying to do it using the app.

I'm pretty close to giving up with eBay, it is such an unholy mess. Everything is different depending who you ask/where you look. I had such an issue last night trying to accept an offer (BPF nonsense), and I didn't even bother to try and send a combined postage invoice as that hasn't been working for ages. Today I bought an item from elsewhere that I have in the past bought on here.
