you can’t aside from contacting the sellers to ask if they have excluded Evri from their settings.
but even then, eBay state in some circumstances, even if you exclude one supplier, they may still use that supplier if Royal Mail can’t be used.

With simple delivery it first state the courier just says standard delivery.
at least that’s how mine are shown

I don't think you can. All ebay shows buyers now is standard or express delivery and does not tell them which courier it is.
Even the seller doesn't know until they get the label. Unless they have turned one of the options off. And if they turn one off ebay charges the buyer more for the remaining one.

With Simple Delivery, there are only two services, Royal Mail and Evri. There is a price for postage when .seller allows both, and different prices if either one is blocked by the seller, in each case the cost is higher than if both allowed. The biggest difference is if the seller chooses Royal Mail only, there is a big jump.which you, the buyer has to pay. I think it makes it very obvious that if both options exist, Ebay will send by Evri.

I live in a "remote" location and have to choose Royal Mail over Evri.
I've found the only way to do this is to, click contact seller and select postage. When you select postage, text appears showing you the actual couriers. Usually it's Evri as standard tracked and Royal Mail Tracked 24 as the more expensive express option, if the seller uses both.
If the seller only uses Evri, there's usually only one option of standard tracked.
Whereas, if a seller uses Royal Mail only, then you tend to get Tracked 48 as the cheaper option and Tracked 24 as the more expensive express option.

If you click "contact seller", then choose "postage", a block of text shows up that will show you which couriers the seller is using, and the order they appear. Doesn't say the price though. You have to go back to the listing and check the postage info there to see which price corresponds to which courier. It's a pain in the butt of unnecessary steps, but it helps me avoid Evri.

Yeah, I only spotted it when I went to ask a seller which couriers they use. Don't know why it's so hard for eBay to include the same info on the actual listing page instead of burying it in there. It's ridiculous.
