Option to select Royal Mail signed for postage through simple delivery

I'm a newbie so hopefully someone more experienced can help.

I want to send more expensive items using Royal Mail Special Delivery Guaranteed, but there's no option to select that only the basic one when using simple delivery.

Can we not use that option ?

eBay's Simple Delivery doesn't include Special Delivery.    Simple Delivery automatically covers most items for £750 for loss or damage in transit.
