I have dispatched an item to a buyer, but the order status is still requesting that I post the item out . Is there any way to change this to reflect that the item has been sent?

You need to finalise the transaction now, and mark it as dispatched only on the Seller Hub here:

Go to Orders >> Awaiting Postage, click on the item then top left on View Order Details.

Far right from More Action drop down menu click on ' Mark as Dispatched' if you have it, add any tracking number there too.

If you bought your own postage you have to add tracking and mark dispatched on My eBay or seller hub,  via the dropdown actions arrow next to the item on orders page.
