Buyer has collected an item and paid through eBay however he didn’t give me the code - I’ve messaged the buyer but he’s not responding , how do I complete the sale without this ?

There's nothing you can do without the code.   You will have to wait up to 21 days for the money to be released but you will get it in the end.
