how do i block sellers sending me offers

You cannot.

I get inundated with them too, as soon as I place an item on watch,  I just delete them straight away.

I am not sure if this will block offers, but go to your communication preferences and look at the section shown below - Offers to buyers may apply,  you need to tick so it goes black
