How to change a delivery company when an item is purchased as the buyer doesn't want to use a certain delivery company. And ebay isn't giving me an option to do so

You can opt out of using Evri or Royal Mail here:

You'd have to cancel/refund the transaction with buyer's agreement (via the dropdown menu for the item on your orders list)  and relist after doing that for the buyer to buy again.
