how can we override simple delivery to use a different delivery service? I don’t want to use Evri to post an expensive electronic item, preferring to use the post office which offers better insurance and tracking. In my listing, I’m making it clear that I’m paying for the postage.
I was advised to login on my laptop as the eBay site is more comprehensive than on a tablet but that hasn’t helped

Simple Delivery is mandatory for Private sellers.
You can though, deselect Evri from your postage options here:

If your item is priced over £750 or bigger than 30kg and 120cm x 80cm x 80cm you can opt out of SD and choose your own postage. If you have problems doing that follow the advice on here:

For items £750 and under you are automatically covered for loss or damage in transit (regardless of the apparent cover provided by the postage) as long as the buyer opens the correct case on ebay.

£750 is the maximum cover provided by ebay, if over that then you would have to use your own method of postage.
They call it Simple but it is far from Simple.
